OUR TEAM

DARIN ROSS - OWNER

Raised in Tulsa, Darin attended CU-Boulder where he received a double degree, Darin Ross finally returned to his hometown in 1997 for a career in healthcare. His love for the restaurant industry began when he helped open the original In the Raw on Brookside.

He developed a true passion for the industry and enjoyed the interaction between customer and guest. This is what inspired him to open a business that could incorporate all of the things he loves about the food and wine industry into a local business that the customer would appreciate.

ROGER BYERS - BAR MANAGER

Our Bar manager and Tulsa native, Roger Byers, got his start as a graduate of the Bartender's Academy of NY under instruction of one of the country's top flair bartenders, Chris Cardone. Roger got his first service industry gig back in 2005 when he began bartending in Great Neck, Long Island at a trendy Asian restaurant called Wild Ginger. Roger's creative endeavors earned him a few side gigs with some unique spirit brands such as TyKu and Bulldog Gin. In 2008 his involvement with Bulldog Gin earned him 3rd place, by public voting, at the "Astor Place Classic Martini Challenge;" where he competed against some of NYC's top mixologists.

Roger loves craft cocktails, craft beer and great wines. He enjoys the fact that the Tulsa nightlife is experiencing a cocktail renaissance that has led to the opening of many great craft cocktail bars around the city. Roger's goal with Doc's wine/cocktail list is to bring fun twists on classic cocktails and great wines offered at a reasonable price. Roger simply wants to find ways of offering our guests an amazing selection without getting too serious or being overly complicated.
